Croque Monsieur

A ham and cheese toastie, French style – perfect for your children’s lunchtime treat.


4 slices of white bread

5g butter, at room temperature

100g gruyère cheese, grated

40g flour

400ml milk

2tbsp Dijon mustard

2 slices of thick ham

Preheat the oven to 220C/gas mark 7. In a saucepan on a low heat, melt the butter.

Use a little of this butter to brush one side of each slice of bread and toast under the grill until golden.

Set the bread to one side while you make the topping.

Stir the flour into the remaining butter to make a paste and cook for 2 minutes. Whisk in the milk ensuring there are no lumps. Increase heat and simmer until thick, season and add in 25g of the gruyère.

To complete, take the bread and spread the untoasted sides with mustard. Add the ham and remaining cheese and place under the grill to melt. Top with the remaining bread, mustard side down, then top with the sauce. Grill until golden and bubbling. Serve with a green salad or French fries.
